Beans and Rice-Crockpot Style!

Here’s another recipe we’ve made a couple times. It’s delicious, cheap, easy, and perfect for our meatless Fridays 🙂

I found it over at Stacy Makes Cents. I just saw that she’s not writing anymore, which is sad, but she still has all sorts of frugal tips and recipes up so check her out!

Again no pictures….ours usually just looks like mush, but I love it! Definitely more tasty and a step up than my hobo living of rive and black beans only 😉

Rice & Beans (our version)
2 cans of beans drained (kidney, black, great northern, pinto, whatever!)
1 cup of quinoa (or brown rice, white rice)
1 can of diced tomatoes with green chilis
1 Tbsp melted butter
1 tsp cumin
1/2 tsp garlic powder
Salt to taste
2 cups of water

1) put everything into the crockpot
2) stir
3) cook on low while you go to work (the recipe says on high for 2-3 hours so maybe that’s why ours is mushy)
