Nearly one month

Geez, just short of a month! Well vacation was awesome! I absolutely LOVE hanging out with my sisters. Still not a lot of sewing. I can’t help it, it’s too nice outside. Yesterday it thundered and I was so excited for a rainy day inside. Nope back to gorgeous 🙂

Now here’s what we’ve been up to in the kitchen lately.

This is a frozen mango just 1/2 the mango because I ate the other half, maybe 1/2 cup vanilla ice cream whatever was left at the bottom o the carton and 1/2 cup or so milk. I just kept dripping it in until the blender did its thing without having too big of a conniption fit. Delicious! Then…

20130801-154545.jpg Josh had the bright idea to modify tater tot casserole into MEXICAN tater tot casserole. So heat oven to 375degrees F. Layer a casserole pan with 2 lbs browned and drained ground beef. Next 1 cup sour cream mixed with 2 packs of taco seasoning and 1 can if tomato soup. Next half bag shredded cheese. Next as many frozen tots as can fit (almost an entire 2 lb. bag) cook for 45 minutes COVErED! Then pull off the cover, add the other 1/2 bag of cheese and cook another 15 min. Then we turned on the broiler briefly cause J likes his tots super crispy. All in all it was good, though next time I’d try mixing the ground beef WITH the sauce because some bites of beef were too dry and bland. Otherwise, not too bad of a creation. I think it would also benefit from some salsa, black olives, and jalapeños on top! Mmmmmmmm!
