Crockpot Chicken Tortilla Soup

Helllllo!! Sorry it’s been so long! I’ve been busy figuring things out and watching this lovely lady šŸ™‚

So, this morning Adam and I put together chicken tortilla soup so we could have some delicious dinner waiting for us tonight. Sorry Kristin, it’s a soup one…won’t be tempting you any šŸ˜‰

Warning: below is an altered recipe because it wouldn’t all fit in our pot…even what is below was too much. So you may want to alter the recipe to use less stuff…unless you have a large crockpot or soup pan! When Adam got home there was a liquid explosion all over the floor and counter because I overflowed it…whoopsies

here is the original recipe I pinned šŸ™‚ thanks Miller Musings, it’s delicious!

Oooo…we tried out crockpot liners today too!! And all my cans lines up ready to go!

Ingredients:
2 cans Ro-Tel tomatoes lime & cilantro
1 can kidney beans rinsed and drained
1 can black beans rinsed and drained
1 can of corn rinsed and drained
1 chopped white onion
1.5 cans of low sodium chicken broth
1/2 cup water
1 packet taco seasoning
2 lg chicken breasts
Cheese and sour cream and tortilla to top…and cilantro to finish if you like that sort of thing, :p

You can tell what we like to eat over here…our ingredients for dinner tend to be fairly similar. We love our taco child’s and stuff…

Put it all in the pot and let it go to work! I didn’t show with chicken since that’s all you’d see
